My Passover Baking Frenzy

We’re heading to a seder tonight and I am in charge of bringing desserts. Here are pics of what I made today. My family (and the couple’s whose home we are going) are not super strict about being Kosher for Passover, so some of the ingredients might not be OK for those of you who are observant of the finer details. I used butter in the recipes as well, so they are not Parve.


Above are Nan Berenji cookies from chezesham.ย Michelle Krell Kidd of GlassPetalSmoke posted this recipe yesterday on Twitter. When I read that they were made with cardamom, I knew I had to make them. The scent of cardamom in baking is incredible! I used butter instead of margarine and brown rice flour instead of white as Michelle suggested.

Above are Haystack/Macaroons from Zoe Bakes. The recipe calls for all kinds of dried fruits, but I used a 1 cup of sliced almonds and 1 cup of semi-sweet chocolate chips instead.

The cake above is a Flourless Chocolate Cake. The recipe is from Everday Cooking’s April 2007 issue. I’ll post it in the comments if someone wants it. (FYI: I used Creme de Cassis instead of Grand Marnier as the recipe calls for ). Off to the seder now!

  1. Very jealous! But in a happy scrumptious way. I can almost taste those hay stack macaroons… Am swooning at the thought of coconutty semi-sweety chocolot lot loty ness! Absolutely inviting. I do find pictures of cookies — from alpha to omega — so delightful.

    P.P.S.S. Creme de Cassis in cookies!- really, that’s just cruel to boast about when one is not able to partake. Did have a kir royale or two yesterfday for Easter dinner that featured C de C!

      I wish we were closer so we could celebrate some holidays together. The flourless chocolate cake had the CdC in it and it was amazing if I do say so myself ๐Ÿ˜‰

      I have had that bottle since NYC days when we had a party and I served Kir Royales. I think I need to make those again, sooner than later.
